The lack of a reliable water supply can be a considerable cause for concern – especially as in many cases they won’t know what they will encounter until they get there.
And there’s a reason why water is so crucial: hand washing.
Even if food is being sold in the middle of a field miles from anywhere – as with a number of festivals and other events – hands must be washed with soap and water. Hand gels and wipes are not a suitable alternative, says the Nationwide Caterers’ Association (NCASS).
“Alcohol gels are not acceptable on their own but can be used in addition to a hand washing system.”
The Food Standards Agency in their Handwashing download states
“Effective handwashing is essential to help prevent bacteria and viruses from spreading to food.”
